Breakfast Cookies

3/4 c.
whole wheat pastry flour
1/2 c. all purpose flour
1/2 tsp.
baking soda
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. salt
1/4 c. canola oil
2 T. butter
1/4 c. brown sugar
3 T. granulated sugar
1 egg
1 small jar of strained carrot baby food
1 tsp vanilla
1/4 c. rolled oats
1/2 c. bran cereal flakes
1/3 c. raisins (i left them out but dried cherries might be good next
time)
1/3 c. toasted walnut pieces (left these out too)
Preheat oven to 350. Whisk together flours, baking soda, cinnamon,
nutmeg and salt. In another bowl combine oil, butter and sugars. Then
add the egg, carrot and vanilla. Beat in the dry ingredients. Then add
the oatmeal and bran flakes, etc. Dough will be more sticky than
usual. Spoon 3-4 tablespoons of dough on to cookie sheet lined with
parchment and flatten slightly. Bake for 12 minutes. The cookies will
smell amazing and be a little soft when you take them out.

Taco Soup (from Shannon Cochran)
Makes 8 servings
1 package Hidden Valley Ranch Dressing Mix
1 package Taco Seasoning Mix
1 (16oz) can pinto beans
1 (16oz) can hot chili beans
1 (16oz) kernel corn
1 (10oz) can Rotel tomatoes
1 (14.5oz) can stewed tomatoes
Add all ingredients. DO NOT DRAIN!!! Cover and simmer for 1 hour.
(Use reduced sodium Hidden Valley and Taco seasoning if you can find
it.)

Pancakes:
1 and ¼ cups of
whole-wheat pastry flour (whole-wheat flour also works)
1 and ½ tsp baking powder
½ tsp salt
1 and ½ cups of milk (I do the light soy milk, but you can do any type
of any fat content)
2 tbsp of oil
1 tbsp of maple syrup
1 tsp vanilla extract
In a large bowl
combine flour, baking powder and salt. In a medium bowl, combine milk,
oil maple syrup and vanilla extract. Pour the liquid ingredients into
the flour mixture and stir until just combined (a few lumps are ok),
then cook on the griddle.
For blueberry
pancakes: add 1 cup of blueberries into the mix
For banana
walnut pancakes: add 1 cup of banana slices into the mix, then ½ cup of
chopped walnuts
For CHOCOLATE
pancakes: reduce the flour to 1 cup and 2 tbsp. Add ¼ cup unsweetened
cocoa powder. Increase the syrup to 2 tbsp.
This makes
about 12 good sized pancakes-or about 4 good sized pancakes (for my
meal) and 10-12 small pancakes (which I keep in the fridge and then pop
in the toaster for a snack for the next few days-which works really
well! Obviously, keeping them for a few days doesn’t work with the
banana ones, but the plain and other flavors work well!)
